After almost nine months in business, Varley Sanford says things are going along steadily and maybe picking up some now that summer has arrived. “I would like to thank the community for their support during these first months,” Sanford said. “People have picked out their favorites and come in regularly for those.” The Hi Way Bar & Café is a pretty basic café with a quiet atmosphere. It is open and welcoming inside and the staff is ready to serve everything from biscuits and gravy and other breakfast choices to their signature prime rib on Friday and Saturday nights. “Our prime is well received and we have the salad bar up on those days also,” Sanford said. “As business picks up in the summer, we will be adding more days for salad bar. We are also adding milk shakes to the menu and other items will be coming a little at a time.” Some customers come in with suggestions, which Varley welcomes. “One guy comes in and he gave me a new recipe for biscuits. I tried it and they are pretty good, plus they are easy and fast to make. We have had a few people come in with dietary restrictions and we are more than glad to work through the menu and find items or figure out how to adjust things so they can have a good meal.” The reports of the favorite meals top with the country fried steak and the mushroom-Swiss burger. “We have people come all the way from Riverton for the country fried steak. Some come once a month and more local people come more often,” said Sanford. “Then there is this person that comes in and has worked in some bigger establishments, he told me not to change a thing on the Mushroom-Swiss. He said it was better than anything he had ever tasted or ever made.” In conjunction with the cafe and bar there is an RV park with cabins, hookups and shower and laundry facilities. More cabins are coming. “It is a slow process, ”Sanford said. “But we keep plugging away and improving all the time.” The Hi Way Bar and Café is open from 6 a.m. to 8 p.m. every day of the week. The bar is open until 2 a.m. They serve a full menu with breakfast served all day. Prime rib is served on Friday and Saturday nights. They can be reached at 307-568-2500.
